Turkey!
It's a shitty meat isn't it? Out of all the birds we nibble on this is the dullest!

Goose, quail, chicken and duck are all very good. Ostrich is my current favourite But.....I'd love to try Swan, There's plenty around this way and I'd have no problem nabbing it, but after I've given it the old one one two, I wouldn't know what to do with it!
Are there any WHO butchers that would want to hack up my forbidden bird for a share of the spoils?
I hear it tastes like beef and It has me intrigued!

I know it's illegal but to hell with such medieval bellendetry!
This Christmas I shall have Swan on my table and to hell with the German Swine!

Re: Turkey!
We had Turkey yesterday.

Lovely.

Brined for 48 hours prior, injected with a full pound of butter, and smoked with oak for six hours.

Spot on.

Re: Turkey!
Hairyhammer spot on our turkey came out lovely with the help of a meat thermometer.
Can't wait for the "leftovers" Boxing Day lunch later today. The best bit of grub of the year.
Cold meat, stuffing, mash and bubble with pickles.haywards piccalilli being an essential part.
Should go down a treat especially after thrashing the west London pansies.

Not yet it hasn't.... slowly cooked comes out superb... anyway I leave all that stuff to Mrs N/Sold... apart from peeling the spuds and slicing the meat the kitchen is out of bounds for me on Xmas day... hence the beer fridge in the (West ham) shed...
